Autumn Squash Soup Recipe

What did the squash say to the watermelon?

You butternut squash me.

September. The only month of the year where you have watermelon AND pumpkins in the grocery store at the same time. It's also the perfect time to start weaving some soups into the weekly meal plan. This food first recipe packs flavor the whole family loves and a nutritional punch mamas can feel proud of.

Let's look at all the nutrition in this simple recipe:

  • Onion: while adding flavor profile to just about any recipe, onions also add a ton of nutrition like quercetin which is an antioxidant flavonoid that reduces heart disease. According to recent studies, the growth of Helicobacter pylori (H. pylori) and Methicillin-resistant Staphylococcus aureus (MRSA) were inhibited when they were paired with quercetin extracted from yellow onions. The sulfur compounds in onions have been found to regulate blood sugar.

  • Apples: considered nutrient-dense fruits, meaning they provide a lot

of nutrients per serving. They're rich in fiber and antioxidants. Eating them is linked to a lower risk of obesity, heart disease, lower risk of diabetes, promote gut health, prevent cancer, help fight asthma, and protect brain health.

  • Butternut squash: Butternut squash is good for your immunity, excellent for your eyes, good source of fiber, help your blood pressure and blood sugar.

We could keep going with the health benefits of coconut oil, cinnamon, bone broth and curry but I think you're getting the idea. If you're ready to start making your own broth, check out this blog post.
